The Surprising Link Between Refined Carbohydrates and Tooth Decay

A Traditional Diet Changes

For many years, Alaskan Natives lived a semi-nomadic lifestyle that relied heavily on hunting and fishing. Their traditional diet was rich in protein and healthy fats, with relatively few carbohydrates.

Between 1955 and 1957, researchers analyzed their diets and carefully measured the amounts of fat, carbohydrates, and protein they consumed. About a decade later, in 1965, researchers conducted another dietary analysis through observations and interviews. The results showed a dramatic shift. Alaskan Natives were eating significantly more carbohydrates and about 50% less protein than they had during the earlier study.

The Rise in Refined Carbohydrates

Researchers observed that many Alaskan Natives had reduced the amount of hunting they did. Instead, some turned to creating and selling souvenirs, which provided a more reliable source of income. With that income came greater access to processed foods that were higher in refined carbohydrates.

While their housing, clothing, and environment remained largely unchanged, their diets had transformed considerably.

What Happened to Their Teeth?

The researchers noticed another significant change: tooth decay had increased dramatically.

Individuals who showed no signs of dental caries during the initial study period had developed evidence of tooth decay by the time of the second analysis. Although many factors can contribute to cavities, the increase in refined carbohydrate consumption appeared to coincide with the rise in dental decay.

What This Means for Your Oral Health

This case study adds to a growing body of evidence suggesting that refined carbohydrates can play a role in the development of dental caries. Foods such as chips, crackers, cookies, and other processed snacks can break down into sugars that feed cavity-causing bacteria in the mouth.
